Biography
Danilo Gasparrini is a restaurant and hospitality executive with over twenty years' experience across Italy and the UK. Following managerial beginnings in multinational companies in London (Pegasus Solutions and Columbus Insurance), he led the creation and growth of Bun Burgers, a premium fast‑casual chain founded in Milan which now has 27 outlets.
Today he is founder of Salty Consulting, an advisory firm that supports high-end restaurant and hospitality groups on growth, multi-site operations, P&L control, food cost and F&B optimisation, with a rigorously data-driven approach. He integrates AI as an operational lever: demand and cover forecasting, menu engineering, pricing and promotions, purchasing planning and staff scheduling, and margin control — connecting POS, CRM and analytics for real-time decision-making.
Its innovation is all-encompassing: technology, processes, format and experience. It acts as a bridge between traditional hospitality culture and new digital models: operational standards, KPIs and training on the one hand; delivery, loyalty, CRM and omnichannel customer journey on the other.
